nosh friday: greek potatoes

(I’ll wait while you pick your jaw up off the floor.)

I’m going to keep this one really simple — partly because I’m writing this near midnight and I will be getting up in 6 hours to catch a plane across the country. But also because this dish is just that  — simple. It needs no fuss, no pomp and circumstance. I make these probably once a week — so delicious that I often don’t eat anything else with them except maybe a small salad. You could also add chopped olives or a drizzle of olive oil to this recipe, if it suits your fancy.


Greek Potatoes
(recipe suited for 1, expand as you will)

1 batch of Perfect Roasted Potatoes
Handful of crumbled feta
1/4 tsp. dried oregano

Make the Perfect Roasted Potatoes. Right after they come out of the oven, scoop them into a large dish, top with crumbled feta and, using the heels of your hands, vigorously rub the dried oregano and let it fall over the potatoes (this helps release its scent and oils…or something).

Eat immediately.
